Karla Bakes: Banana muffins

I'm back with a new post on one of my favourite baking recipes - banana muffins! This recipe is a family favourite at home. I've seen my mum make it numerous times where she's added carrot shavings and raisins! I decided to go ahead and make some myself and share the recipe with you! 

What you'll need: 
200 grams of plain flour
150 grams of sugar
75 grams of butter
1/2 teaspoon of baking powder
1/4 teaspoon of bicarbonate of soda 
1/2 teaspoon of salt
1 egg
3 medium bananas OR 2 large bananas - mashed

Prep time: 25 mins at gas mark 4 - 225 °C

Serves: 12 muffin cases

Sift together the flour, bicarbonate of soda, baking powder and salt in a bowl.



In a plate mash the bananas together with a fork. This is two large bananas being mashed. 



Get a separate bowl and combine the bananas, sugar, egg and butter. Since the bananas are already sweet I recommend to use less sugar, if not, you can use the full 150 grams.



Now you can mix all the wet ingredients together, enough to break the butter and bananas apart.



Once that's done, combine the wet ingredients into the bowl with flour and start mixing away!



Stop mixing once it looks smooth and everything has been blended together! 



By this time you should have already made sure the oven is turned on at gas mark 4 ~ 225 °C. Set out your muffin cases and evenly distribute the batter.


I managed to fill up all 12 muffin cases evenly - hooray! 



This is me trying to be super fancy and grabbing a close up of muffins before :) 



So, once the mixture is ready, put them inside the oven for 25 minutes! Use this time to clean up if you haven't done so during the process. 



After 25 minutes, this is what they looked like! You want them to have a nice golden brown colour and to be sure that they are ready you can stick a knife through the middle of the muffins and the knife should come out clean without any mixture on it. 


I took them out the muffin pan and let them sit for 10 minutes until they cooled down and that was it! 


I hoped you enjoyed this step by step picture recipe from my mum's recipe book. It was really easy to bake the muffins and it's a great way of using bananas! They tasted delicious but like always, not as good as my mums :)
